DESCRIPTION OF THE CHEF’SCHOICE HYBRID

DIAMOND HONE®
KNIFE SHARPENER 220
The Hybrid
®
has tw
o sharpening Stages, a first sharpening Stage that is motor driv
en,
follo
wed b
y a honing Stage that is entirely manual in oper
ation. The sharpening Stage 1 is
motor driv
en, has two slots (the two slots on the left) t
o sharpen alternat
ely the left and
right side of the blade’s edge
. Alwa
ys follow an alt
ernating pattern of sharpening in right
and left slots when using Stage 1. This dual-slot stage quickly es
tablishes a sharp edge
that is then honed and finished in the manual second stage which uses only a single slot
(far right slot) that hones both sides of the edge simultaneously
.

. The primary edge

e each formed in Stage 1 at a nominal 20 degrees on each side of the edge, which
results in a t
otal primary edge of 40 degrees. Stage 2 cr

eled edge structure that will sta

T
o sharpen, place the sharpener on the table gripping it securely with y
our left hand. Push
on the pow
er switch. Insert the knife blade, Figur
e 1, near its handle, into the far left slot
of Stage #1 and allow the left f
ace of the blade to res
t on the left face of the slot as y
ou
pull the knife to
ward y
ou. The knife edge should be in sustained mo
ving contact with the
internal diamond coa
ted disk. Only light do
wnward for
ce will be necessary as y
ou pull the
blade to
ward y
ou. Listen carefully to insur
e your knife maintains good c
ontact with the di
-
amond disk. T
ake about 5 seconds to mak
e each pull if you hav
e a six inch (6”) long blade.
Increase the time of each pull for longer blades or decr
ease the time for shorter blades.
Make one pull of the blade in the left slot as described abo
ve and then r
epeat the same
proc
edure in the adjac
ent (right) slot of Stage 1. As y
ou pull the knife thru the right slot,
(see Figur
e 3), allow the right side of the knif
e to r
est on the right fac
e of the slot. If your
knife, befor
e sharpening, is not very dull y
ou will find that only about 5 pairs of pulls,

reshape and sharpen the old edge. In S

ou when using Stage 1. Before leaving Stage 1 it is important
to e
xamine the knife edge to insur
e there is a small burr along one side of the edge.
Figure 2 illustr

o check for the burr

ing pull was in the right slot ther
e should be a small burr on the right side of the blade
edge. If the last pull w
as in the left slot there should be a small burr along the left side of
the edge. If there is no burr mak
e another pair of pulls and again check for a burr
. Repeat
making pairs of alternating right and left pulls until y
ou create a small burr along the edge.
(Sometimes it is easier to cr
eate the burr if y
ou pull the blade slower
.) Make another single
pull and confirm ther
e is a burr along the edge after each pull. Only then ar
e you ar
e ready
to hone in Stage 2.

GE 2
Since Stage 2 is a manual honing stage y
ou can turn o the pow
er switch. If the knif
e is
fully sharpened in Stage 1 only 4-5 back and forth str
okes will be needed in the single slot
of Stage 2 (the far right slot, see Figur
e 4) to hone a small second bev
el along the edge
which will be ex
ceedingly sharp and eectiv
e. It should cut paper smoothly allowing y
ou
to mak
e straight or curv
ed cuts easily
.
For optimum r
esults in Stage 2
cent
er
the blade within the slot width and keep the
length of the blade aligned with the center line of the slot as y
ou mov
e the blade back
and forth in the slot without lifting. Apply only a light do
wnw
ard pr
essure, about 3-4
pounds, on the blade as you sharpen in S
tage 2. For optimum r
esults make smooth c
on
-
sistent s
trok
es while maintaining the light downw
ard pr
essure to insur
e that the two disk
s
rotat
e as you mov
e the blade back and forth. The finished edge will be v
ery sharp and
burr free.
